Novita

Novita in the Zakynthian dialect means “news” and as a name was chosen to reveal the pioneering character that Goustolidi variety has to show.

Vinification / Maturation

  • Pre-fermentation extraction under a controlled environment, alcoholic fermentation at graduated temperatures. Maturation ‘’Sur lie’’ for 2 months with regular stirring

Tasting Characteristics

  • Intense nose and we distinguished aromas of lemon flowers, citrus fruits, bergamot, jasmine and white flesh fruits. In the mouth, pleasantly surprises us with its balancing acidity and oiliness. Of particular interest is the ability for a white variety to evolve constantly in the bottle.

Aging potential

  • Ready to drink and 5-7 years in front of it to go on time.

Pairing

  • It is ideally combined with fish, white meat, pasta and cheese.
